Buttermilk Rhubarb Cake Recipe

Makes one  9 x 12 pan


½ cup butter, softened
1 ½ cups brown sugar
1 egg, beaten
pinch of salt
1 tsp. vanilla
1 cup buttermilk (or use 1 tbsp vinegar to milk)
2 ½ cups flour
1 tsp. baking soda
1 tsp. baking powder

Beat above ingredients, then add 2 cups of chopped rhubarb and fold in. Pour into greased 9 x 12 pan.


Mix 1/2 tsp white sugar with 1/2 tsp cinnamon and sprinkle on top (or 1 tbsp butter & ½ c. sugar for a streusel-like topping). 

Bake at 350 degrees for 40 to 45 minutes or until tester comes out clean.
